Nothing like a good barbecue to fully enjoy his garden. When space is lacking, mobile devices are convenient. But the ideal remains
the masonry barbecue.
Choose the location
The size of a barbecue is equal to that of the masonry itself plus the space required for traffic and safety.
It is also necessary to take into account the evacuation of the fumes. Ideally, a barbecue is oriented perpendicular to the prevailing breeze so as to preserve the focus of wind gusts and to promote constant warmth. These instructions are important for charcoal, less for gas and unnecessary for electric models. Avoid, however, that the fumes are turned down on the guests.
Also be careful not to install the barbecue too close to the house: grill smells take advantage of doors and windows open to spread inside and, if it is against the front, it stains irretrievably.
• Once the location is determined, you need to worry about the seat. If the installation grows, and especially the weight, a reinforced concrete foundation becomes indispensable.
• Why not take the opportunity to bring water and electricity, especially if you plan to install a full kitchen? Think about it before pouring the slab; you will move the networks below.
The barbecue has become the essential accessory of a garden, south as north of the Loire. But regulation is struggling to adapt, even though the influence of Europe has considerably contributed to improving their security. Thus, the prohibition of a fire in his garden also applies to barbecues. No less than nine standards deal with this subject. In particular the NF EN 1860 series, plus three European directives, as well as several decrees, notices and communications. At the time of choice, the lesson to be drawn is that the model must be CE marked.
It remains to determine the barbecue that will suit you best. Mobile, it is about carts mounted on wheels. Fixed, it can be coated masonry, metal, reconstituted stone, natural stone or brick.
You can start self-construction by using traditional techniques (breeze block, concrete...) or opt for the kit. Everything is then provided, including the assembly plan. Design errors are eliminated and construction is within the reach of the greatest number.
Avoid first prices
In this vast family of kits, models can be classified into three price ranges, corresponding to specific categories.
It only takes € 150 to buy a model ready to mount a built-in barbecue. At this price, you have the minimum, that is to say, two jambs, a stone slab and a small backsplash to protect the embers from the wind. This simplicity is also found for the assembly.
In return the cooking surface is sometimes reduced, as the height of the slab. There is no service to install the accessories. If you have children, the risks are the same as with a mobile barbecue, the possibility of a changeover less. If your budget is limited or if you miss the place, prefer a good barbecue on wheel, with many storage tips, quickly stored and barely more expensive.
Take the time to choose
A comfortable cooking surface, storage under the slab, a reluctant and a drain for better control of cooking and channeling fumes: this is the classic definition of a masonry barbecue.
Prices start around 250 €. In reconstituted stone, brick or natural stone, the choice is vast and determined by the appearance, the style, as well as the proposed facilities. For example, these barbecues are often equipped with a serving table.
• To compare prices, check whether a removable fireplace is included or not (see table) and ask for the delivery conditions. Some models exceed half a ton and become difficult to store in the trunk! Visit several points of sale. With a little experience, you will find that each range is based on the same base, sold at different price levels depending on the number of options (hood, serving) and the quality of the stone, natural or reconstituted. Real outdoor kitchens
When the equipment and the accessories take precedence over the cooking space, that the simple service develops in true plan of work, that the arrangements are equipped with doors and that the whole costs several thousands of euros, the barbecue basic is transformed into an outdoor kitchen. The principle of design is comparable to that of any kitchen: you choose the number and use of different modules and you associate them as you wish: wine rack, secondary fireplace, sink and refrigerator cover, all is possible.
Energy and cooking mode
As a general rule, kit barbecues are provided without a fireplace. It is therefore possible to supplement them according to the type of energy preferred (wood and charcoal, Butane gas or Propane, electricity).
• Wood and charcoal
In France, this method of cooking is our preference, but it is the most difficult to control and more dangerous. Accidents are common, especially during ignition. And the first victims are not children, but young adult men... Clearly, the kings of grilling, as this activity remains their monopoly. Compliance with safety instructions is simple. Also remember that cooking on the embers releases more or less toxic compounds.
• Butane gas or Propane
Powered by a bottle, the burner is placed under a bed of refractory materials (lava stones). The rise in temperature is very fast, the heat homogeneous and adjustable. The main constraint is bottle management, which requires one or two replacements per season.
Electric barbecues are rare, except for small table hearths. The vertical models are the ones that come closest to traditional grills. The horizontal plate appliances provide cooking comparable to that of a pan.
In any case, adding a fireplace (rather cast iron) is preferable. This helps preserve the barbecue. Be sure to check the odds, especially if there is a rotisserie. Count on average from 100 to 400 € for a standard fireplace, depending on the cooking method and the energy used.
Fashionable... the plancha
This sheet metal plate is placed on the hearth and allows direct cooking by contact: ideal for small parts such as shrimps and vegetables... The plancha is the Spanish version of the Savoyard stone or baking on Asian stone. This accessory is available for all three types of energy and offered as a gas-fired independent fireplace. Be sure to clean the plate after each use.
A wood oven and a barbecue can be associated in the same structure but they are two independent elements. Indeed, where the barbecue uses instant heat embers, the oven exploits the heat stored in its mass. That's why a wood oven is always more imposing *. The more it is massive, the more it retains the heat and restores it homogeneously. It must also be built in a material that stores heat, such as firebrick.
Obviously, wood ovens are offered in kit (Panyol, Four Grand Mère, Tom Press...). The prices of a kit to assemble start around 900 €, excluding delivery. Be careful not to be fooled by the dimensions. Indeed, in addition to the kit, it is necessary to provide a thermal mass of at least 10 cm thick (slab, sand, brick, etc.). It is therefore necessary to take care of the seat.

A lid on the fireplace reduces the emission of fumes, keeps the heat and allows to prefer the cooking on the spit. This system is common on gas fireplaces, more rare for wood. For electricity, it is then rather a transformation into a pizza oven.
