Your project is nothing less than installing wood paneling on a wooden structure. A simple air gap (anyway mandatory) will participate in the insulation. I think, however, that you will benefit from improving the insulation with insulating panels (why not wood fiber or mineral wool, or extruded polystyrene). The cleats on which you will fix your cladding boards will frame the insulation. For cladding, you can use composite wood, unalterable and maintenance-free (see many NEWS on the subject in the site).
