The floor of my garage is paved (without beach below, unfortunately), I would like to pour concrete over. My question is: can I dig between the pavers so that the cement fits between, and make a soil about 5 to 6 cm thick?

Making mortar joints between pavers will not stabilize them when you pass a vehicle on your screed. I have the impression that it will crack. I think you'd better depaver the whole thing, pour a concrete slab then pour a mortar screed. You will find the opportunity to reuse your pavers outside, what they are made for!
